This simple presentation around a table and a few glasses ended up lasting 2 hours such was the interest this man and his wines generated! First, let me tell you that Didier does not go around unnoticed! Massive, solidly planted, with powerful hands, a good smile and a strong regional accent, you’re bound to remember the encounter! To begin with, Didier is a healer, and not one sanctioned by a diploma but one who has so much energy in his hands that he HAS to offer it to the people he is drawn to! This side of his personality alone was worth the meeting but then he went on to explain how he brought to his vineyard his exceptional perception of energy in living things. How he takes every conceivable step from the ground up to end up with wines that have a rare flavor of authenticity! Since 1963 the vineyard has practiced organic farming, following the strict methods and rules defined by the BIOFRANC organic association. Thus, all of their vines are cultivated without chemical fertilizers, weed-killers, insecticides or artificial fungicides. Only organic compost of animal or vegetable origin, and natural insoluble minerals, are added to the land. Why such a choice? Patrick and Maryse Boudon, a couple with a combined total of 70 years’ winegrowing experience, explain: “We believe that wine can only be as good as the grape from which it is made, and the quality of the grape depends solely upon the husbandry devoted to it and the soil from which it stems. In order for the wine to maintain its genuine quality and perfume, intervention on the grapes and wine are kept to a minimum. This begins with a pruning policy which reduces the average yield to just 50hl/hectare. During harvest, in order to avoid bruising the fruit, grapes are collected by hand in small crates. In the cellar, the vinification is conducted with accurate control of temperature and oxidation. For the past 12 years, Casina di Cornia has been a member ECOCERT, an independent organic certification agency.
